León, Guanajuato, October 18, 2018.- With thematic axes such as ages in nutrition, metabolic diseases and functional foods as anti-glycation agents will be held in the third Ibero-American symposium on AGEs and Health that brings together national specialists and researchers from of nine countries.
Dr. María Eugenia Garay Sevilla, professor-researcher ascribed to the Department of Medical Sciences of the University of Guanajuato (UG) Campus León and member of the organizing Committee of the event explained that "the final products of advanced glycation (AGEs), are a highly heterogeneous group of compounds that can be generated within the organism itself or ingested, preformed in food depending primarily on the way of cooking."
She added that the accumulation of these compounds has been associated with various pathologies such as ageing, obesity, metabolic syndrome, diabetes mellitus, cardiovascular disease, cognitive function, cancer among other chronic diseases.
She said that in this third edition of the symposium that will take place from October 24 to 26 in the Forum venue of Campus Léon will present the most recent research results in this topic, in addition to the proposed development of new research, as well as the work in the mechanisms of prevention and care of diseases.
Seventeen lectures will be held in this event, as well as 24 posters and four in oral form, as well as round tables and cultural events.
It should be noted that this edition will be attended by five researchers from UG's Campus Léon, also joined by academics from the Universidad Autónoma de San Luís Potosí, Universidad de Guadalajara and the Center for Research and Advanced Studies of the IPN (Cinvestav) Mexico.
Dr. María Eugenia Garay indicated that UG, is a benchmark in the research work of AGEs which has allowed collaboration for twenty years and the approach to other areas such as analytical chemistry, physics and food science for the study of these compounds, their measurement and their health implications. "This event is the result of many efforts and multidisciplinary work that has managed to bring together experts from around the world, the first took place in the city of Guanajuato in 2014, the second was held in Santiago de Chile in 2016 and now will be held in León, which will also be reflected in the dietary book AGEs and their role in health and disease, edited by Dr. Jaime Uribarri published in 2018 by Taylor & Francis Group.
