Celaya, Gto. October 25, 2018.- With the presence of prominent national speakers from sister universities, the academic activities of the 3rd National Nutrition Symposium were initiated, which on this occasion focused on highlighting the aspects of disease prevention from food.

Dr. Jorge Luis Rosado Loria, professor of the Faculty of Natural Sciences at the Universidad Autónoma de Querétaro, gave the conference "effect of the deficiency of vitamins and minerals in the obesity of Mexicans" in which, from a study conducted with non-pregnant women, managed to establish that vitamin and mineral deficiency is associated with obesity, and that food supplementation with these nutrients decreases body fat in obese people and helps a diet to reduce weight but not cause loss of energy in the body.

Dr. Rosado, member of the National System of Researchers, level 3 and expert in nutrition issues, has carried out cutting-edge research in food and chronic-degenerative diseases, nutrient deficiency and its effect on health, as well as functional food. From his research work some myths have been broken, such as believing that thin people are malnourished, or obese people enjoy an enough and complete diet.

According to studies published by the Network for the Prevention and Treatment of Obesity (REDIPO), which he presides, at least 70% of adults in Mexico are overweight, which constitutes the fifth risk factor of death.

By explaining why some diets do not achieve the desired effect, the investigator attributed to them that they are low in vitamins and minerals, which produces contrary results to those that it pursues. The REDIPO, reported, is currently focused on studies that derive care strategies for the reduction of obesity, which has become a public health problem.

Also, in this 3rd National Nutrition Symposium participated, Dr. Olga Patricia García Obregón, who at the conference "Microbiota in Health and disease", spoke of the influence of the community of live microorganisms in the digestive tract (intestinal microbiota), with the growth of the body, the development of immunity and nutrition. "The analysis of Microbiota at the family level can be used to identify variations in bacterial communities and to determine their association with obesity and its relationship with metabolic risk markers," she concluded.

Julieta Ponce Sánchez addressed the theme "Public policies for sustainable food", which established that, if the current scenario of malnutrition and lack of food is maintained, it will be impossible to reach the zero-hunger target for 2030, established by the FAO (UN organization for Food and Agriculture).

She stressed that to reverse this trend it would be necessary to design and articulate new strategies and public policies of collective and solidarity work.

Wilberth Marcelo Poot Rangel, spoke on prevention of chronic degenerative diseases and their relationship with sustainable food.

The symposium was organized in the framework of World Food Day, with the purpose of inducing reflection processes in the students of the Nutrition bachelor's, from which they can act to reduce the double burden of malnutrition in Mexico, raising awareness in the population of having a more sustainable lifestyle.
