León, Gto., October 30, 2018.- Dr. Jaime Uribarri, from Mount Sinai School of Medicine, New York, USA and a referring doctor for his research, gave the conference titled "Effects of Low diets on AGEs in humans" in which he explained how food can increase or Decrease the amount of AGEs depending on the way they are cooked.

In the framework of the third Ibero-American symposium "AGEs and Health" convened by the Department of Medical Sciences of the University of Guanajuato (UG), Dr. Uribarri indicated that in his research he carried out tests where the quantity of AGEs was significantly reduced in patients with diabetes, metabolic syndrome and kidney failure, in order to determine if the amount of nutrients in the food presents a variation in the consumer.

He noted that the biological effects of AGEs can affect the structure and function of proteins and activate a variety of receptors producing oxidative stress and health consequences.

"AGEs are a heterogeneous group of molecules generated by means of non-enzymatic reactions of glycation and oxidation of proteins, lipids and nucleic acids. The increased formation of AGEs occurs in conditions such as diabetes mellitus and aging.

On the other hand, in relation to the same subject, Dr. Mercedes López, who belongs to the national system of researchers of the National Council of Science and Technology (Conacyt) and is a researcher at the Center for Research and Advanced Studies (Cinvestav) of the National Polytechnic Institute carried out an analysis of the properties of the agave and the health benefits.

She commented that of the 310 different species of agave that exist in the world, at least 290 are in Mexico so this country is a benchmark for research on this plant.

In her research found that, depending on the age of the agave, varies the amount of carbohydrates that contain and mentioned that the fructans that is derived from the agave have positive effects on health.

The Ibero-American Symposium on AGEs and health gathered experts from countries in America and Europe for three days collaborating jointly with UG scholars with research to generate knowledge for the benefit of the population.
